Milk Street's Ultimate Guide to Thanksgiving

The best recipes, tips, and expert advice to help you have the most delicious Thanksgiving ever.

For most of us, Thanksgiving dinner is the most ambitious meal we'll prepare all year. Though the menu is fairly set, each dish offers an opportunity for reinvention, or at least improvement.

This guide is packed with the classics, but the recipes are smarter, tastier and—in some cases—easier. We're talking extra tender rolls, a turkey that offers both juicy breast meat and fully cooked legs, the fluffiest (incidentally make-ahead) mashed potatoes we've ever eaten, and a sweet potato pie with an even sweeter surprise hidden under the velvety filling.

We also have plenty of planning resources, including a week-by-week to-do list, sample menus, and equipment recommendations.

Happy Thanksgiving! And happy cooking!

The Last Turkey Recipe You'll Ever Need

Sliced braised turkey breast and legs on a platter with gravy

The architecture of a turkey is the reason most turkey recipes turn out sawdust-like breast meat and grisly, undercooked legs. Turkey legs, with their tendons, connective tissue, cartilage and fat, need to be cooked to at least 195°F, not 175°F, to render the dark meat silky and tender. The breast, one the other hand, only needs to reach 165°F—a difference of 30 whole degrees. The good news? Chris Kimball has a (surprisingly elegant) solution, which also produces the world’s best gravy.

Matt Card's Guide

Perfect Mashed Potatoes

Bowl of creamy mashed potatoes with chives

Over the last three decades, Matt Card estimates he's made a metric ton of mashed potatoes. The seemingly simple dish has a ton of variables. You can boil or bake, mash or rice, flavor with herbs or keep it classic. Then there are the dairy options—butter, milk, heavy cream, half & half, sour cream, yogurt, and crème fraîche all have their merits, but how much dairy is too much dairy? And how do you strike the perfect balance of creamy and fluffy, without obscuring the flavor of the potato? Matt answers all of these questions (and more) so you can craft your own perfect pot of mashed potatoes.

Get Those Marshmallows Out of There!

Sweet potatoes do not need marshmallows. They are sweet enough on their own. They do, however, benefit from butter, herbs, a little vanilla, as well as unexpected ingredients like miso, Aleppo pepper, and browned butter.

Our newest sweet potato recipe combines cornbread and soufflé to make a Southern-style spoonbread. This version is gussied up for the holiday table with sweet potato, browned butter and Parmesan. Canned sweet potato puree simplifies the prep, but we drain it of excess moisture so the spoonbread won’t be sodden. A final flourish of thyme-infused browned butter brings it all together.

Instant Potato Flakes Make the Best Rolls

Potato dinner rolls on a cooling rack

The best dinner rolls are unfailingly soft, made for sopping up runaway gravy or tearing in half to make miniature turkey sandwiches. These rolls aren't just softer than the average bun, they stay soft. Even after they’ve cooled down—and long after most rolls begin to harden and dry out—these potato rolls retain they’re moisture, all thanks to the addition of instant mashed potato flakes.
