What to Look for in a Portable Induction Cooktop

I have occasionally seen the use of a portable induction cooktop in your kitchen. Is there a certain brand and model that you would recommend?

Hi Marsha - If you've seen us (or guests of ours) use a portable induction cooktop it's likely we are using it simply for convenience. When filming videos, for social media especially, a traditional cooktop setup isn't always positioned to show you what we want you to see so we will set up a portable cooktop instead. We don't have a specific brand recommendation, but you'll want to look for an induction cooktop that comes with several preset power levels, which adjust the wattage used by the burner. The more power levels, the more control you’ll have over the speed of cooking. You’ll also want to look at the burner size as you compare portable induction cooktops. Most have a minimum and maximum pot size that they can accommodate, so make sure your induction-friendly pans will fit. (Remember: Induction cookware must be made out of a magnetic-based material, such as cast iron or magnetic stainless steel.) Hope that helps! The Milk Street Team

Where to Buy the Tortillas Mentioned on the Milk Street TV Show

On your recent program, Christopher Kimball recommended a superior brand of corn tortillas that could be ordered online and mentioned that they would try to post a link to order somewhere on the website. I haven't been able to locate this. Any suggestions?

Hi Rochelle - Thanks for your patience on a reply while I checked in with Chris and the radio team. I think it's possible that, at the time, Chris was referring to the flour tortillas from Caramelo in Kansas. They used to only produce flour tortillas, but just announced they will be soon be producing corn tortillas as well. Corn tortillas are a little harder to produce for mail order since they stale so quickly, but it sounds like Caramelo has done some extensive testing and R&D so should be reliable. Hope that helps! Best Affordable Nonstick Skillet Recommendations

I currently own, several stainless steel, and cast iron skillets. My missing player is a non-stick. What would you recommend as a solid good non-stick skillet. I don't want the most or the least expensive version - a good solid skillet at a good price.

Hi Michael - When it comes to nonstick skillets we don't recommend spending a lot of money on something high-end. This is because, regardless of brand or quality level, the nonstick coating is going to wear off and render the skillet ineffective (and potentially cause chips to release into your food) in about a year if it's used regularly. Instead we recommend one of two options. First, with the right care, a carbon steel or cast iron pan can be nonstick. In this case, if you're really diligent about seasoning and usage, you can have one pan that serves many purposes. If you want something less labor-intensive, we recommend visiting your local discount home furnishings store (for example, TJ Maxx or Home Goods) and looking for a reasonably-priced, heavy-weight nonstick skillet. You can usually find a stainless steel one for less than $50. Best, The Milk Street Team

Best Knife Sharpening System Alternative to Edge Pro Apex

Hi, I’m wondering if you can help me in selecting a new knife sharpening system. For years I’ve used an Edge Pro Apex system and strop between uses on my good Japanese and German knifes.  I have been extremely happy with it but I’m finding that lately I’m hesitant to get it out and set it up.  This may be because of age and or laziness. I use a Chefs Choice 120 on my wife’s “kitchen” knifes and have found it to been satisfactory. So now I think that I would like to replace my Edge Pro Apex system with something that I will regularly use as needed.  Currently I am interested in using either a Brod & Taylor Professional VG2 Knife Sharpener, a Work Sharp Culinary E5 and Upgrade Kit, or a Chefs Choice 1520 sharpener. I would appreciate your comments about these items or any other device that I should be considering. Thanks

We love Work Sharp - their basic system is under $100 which is a bargain. Noticed that your comment was from Dec 2022! Assume you have already made a decision by now! There is also a new worksharp system coming out that is $299 - cool but probably way more than most folks want to spend.

Is there a list of the most commonly used ingredients in the milk street recipes? If so, I can't find it. It would be great if you compiled a "milk street pantry" list. Because I love the recipes, I just hate having to run out and grab 1/2 the ingredients every time I want to cook one. Any info you can provide is greatly appreciated.

Hi Joel - I believe Chris is using the All-Clad Cordless Rechargeable Hand Blender. This is an excellent model, though obviously pricey.
