Hi Elizabeth--
I thought I posted a thank you for your ideas, but it looks like it didn't go through? I'm based in Seattle, so I'm a little worried that salmon is a mainstay here, and two of my guests are far better at cooking it than I.
This may be a little niche, but if you check this again, do you know of a fish mole? I'm Mexican-American and love trying new mole recipes, and I love Diana Kennedy's work. I'm more on the expert amateur end of cooking abilities--no formal schooling but can successfully accomplish complicated recipes. Thanks again!

Your comment came through! Sometimes it takes a little time for them to post.
Our recipe for was developed to be made with chicken, but it would work nicely with fish. Omit the part about cooking the chicken and use vegetable broth in the sauce. Serve the sauce with cooked fish. Cookbook author and restaurateur Zarela Martínez says that the yellow mole would be best with a mild fish like pan-fried sole rather than a stronger tasting fish.
