Yakiudon
On a recent trip to Japan, Chris Kimball and Matt Card had a classic yakiudon (stir-fried udon noodles with meat and vegetables) prepared by the team at Cofunia Cooking School in Nara.
This version was prepared with very thin slices of pork belly and a sauce made with sake, mirin, soy, oyster sauce, and Worcestershire sauce. They first cooked the pork for 4-5 minutes, added in sliced onions and cabbage, then removed everything from the pan. They cooked the noodles alone for 3 or so minutes, then put the pork and veggies back in, added the sauce and tossed everything together to finish.
