Rose Hattabaugh’s Top-20 Recipes From ‘Milk Street Bakes’
Our resident baking expert’s favorite recipes from our newest cookbook

We’re all immensely proud of our newest cookbook, “Milk Street Bakes,” but our resident baking expert Rose Hattabaugh might be its biggest fan. It’s full of what Rose refers to as “rockstar recipes” that make you feel like you’ve leveled up your baking skills. Here are her top 20 (with commentary from Rose herself!), including the “most tender scone” you’ll ever eat, a crowd-pleasing slab pizza you can make without any special equipment, and a rich double-chocolate cake that’s infused with the boozy flavors of a Manhattan.
Toasted Oat and Maple Scones

“Oat and maple through and through. Starting with the toasted maple oat mix that is incorporated into the flour, batter and topping. The MOST tender scone you will ever eat, with a maple glaze to boot.”
Whole-Wheat Muesli Soda Bread

“Quick and easy, this is like a two-in-one breakfast with muesli baked right into a not-to-sweet bread.”
Swedish Cardamon Buns

“These soft, yeasted, spiced buns are a classic, and we really did them justice.”
Coconut Milk-Flour Tortillas

“These Honduran tortillas roll out beautifully and have a touch of sweetness from the coconut milk.”
Orange-Olive Oil Sweet Breads

“Like an elevated baked donut, these olive oil sweet breads are soft and light, studded with candied orange and anise seed. Brushed with butter and dipped in sugar, they are a lovely, sophisticated treat.“
Seeded Crackers with Smoked Paprika and Olive Oil

“Most people do not make their own crackers, so if you do—impressive! These are rustic and fun with a spicy kick.”
Buttermilk Monkey Bread

“Not your Mama's monkey bread! We subbed the “dough-in-a-tube” for a yeasted buttermilk dough that makes a plush and dramatic pull apart bundt that's sweet and cinnamon-y to the core!“
Lemon-Orange Tart

“This is a super simple tart that has all the citrusy flavor of a classic lemon tart without the hassle of making a curd.”
Tarte Flambée

“A simple dough topped with simple ingredients: sautéed onions, bacon and creme frâiche. It proved to be one of the sleeper hits of our book. Delicious!”
Babas Au Rhum

“Unlike the usual leaden, soaked cakes, we lightly sprinkled these brioche rolls with an orangey rum syrup and top them with softly whipped cream flavored with the same. Delicate and sophisticated.”
Pizza with Ricotta, Zucchini and Mint

“This fresh and light topping is perfectly springy on top of our REALLY good homemade pizza dough!”
Tarte Tatin

“Also a classic, our tarte tatin is the ultimate version, with a sturdy but delicious crust. Perfectly cooked, tender apples glisten with a caramel flavored with a hint of maple syrup.”
Slab Pizza with Sausage, Chard and Onion

“Need a crowd-pleaser pizza? This is it. Thick and chewy dough slathered with sauce and topped with a melty cheese mix. Plus chunks of spicy sausage, red onion and the somewhat unusual chard.”
Bête Noire

“This rich, double chocolate cake is infused with the boozy flavors of a Manhattan: orange, bourbon and bitters.”
Beef, Spinach and Feta Gozleme

“Wrapped in unleavened yufka, this spiced beef with spinach and feta is crispy and satisfying.”
Glazed Guinness Gingerbread

“A spicy and warm gingerbread that gets some extra depth from the Guinness.”
Turkish-Style Sesame Rings

“These sesame rings have a bagel-like chew and a nutty, sesame-coated exterior. Perfect with a chopped salad or for sopping up a fried egg.”
Cinnamon-Sugared Chocolate and Orange Mandelbrot

“Similar to a biscotti, these are filled with chunks of dark chocolate with a hint of orange and covered with cinnamon sugar. These make a huge batch, perfect for gifting.”
Georgian Cheese Bread

“This cheese-stuffed beauty is a tear-and-dip situation that’s perfect for a Sunday afternoon sports watch party.”
Chocolate-Hazelnut Cream Cake

“An uber-chocolate cake filled with a lush, hazelnut filling and topped with a fluffy, mascarpone cream. It's a show-stopper!”
