A frittata is one of the simplest meals you can make, and one of the most variable. You can add just about any type of vegetable, but when using moisture-rich vegetables, such as the zucchini and tomatoes in this version, it’s key to precook them to soften their texture and drive off some of their water. You will need an oven-safe 10-inch nonstick skillet, as the frittata starts on the stovetop and finishes in the oven.

Tip

Don’t purchase pre-crumbled feta, which is drier and contains anti-caking agents that affect how the cheese melts and combines with other ingredients. Feta sold in block form that you crumble yourself is the way to go.
