Toss-Your-Garlic Tomato Sauce

This two-ingredient (not including oil and salt), 15-minute tomato sauce requires a can opener but no knifework and is super easy to make. It mirrors the technique used by the many Italian home cooks and chefs with whom we’ve spent time in the kitchen. The recipe yields enough sauce to coat 1 pound of pasta. Do as the Italians do and add the drained pasta directly to the sauce in the skillet and toss for a minute or so to marry the elements.

Ingredients
  • 4

    tablespoons extra-virgin olive oil, divided

  • 3 - 5

    medium garlic cloves, smashed and peeled

  • 28

    ounce can whole peeled tomatoes, juices drained and reserved, tomatoes mashed to a pulp

  • Kosher salt

  • Torn fresh basil, to serve (optional)

Step 1

In a 12-inch skillet over medium-high, combine 3 tablespoons oil and the garlic. Cook, stirring, until the garlic is golden brown, 2 to 3 minutes. Remove and discard the cloves or reserve for another use. Add the tomato juices to the pan. Bring to a simmer and cook, stirring often, until thick enough that a spatula drawn through the mixture leaves a trail, 4 to 5 minutes.

Step 2

Add the mashed tomatoes and cook, stirring often, until slightly thickened, about 5 minutes. Off heat, stir in the remaining 1 tablespoon oil. Taste and season with salt, then stir in basil (if using).
