
Simple Steamed Bulgur

Bulgur is cracked whole wheat that is parcooked then dried. For this simple accompaniment to the lamb stew, be sure to use coarse bulgur, which has a hearty, nutty texture; fine and medium bulgur, if used in place of coarse, will wind up soggy and overdone.
In a large saucepan, bring 2¼ cups water and 1 teaspoon salt to a boil. Stir in the bulgur, cover and reduce to medium-low. Cook without stirring until the bulgur is tender and has absorbed the liquid, 15 to 17 minutes. Remove the pan from the heat, uncover and drape a kitchen towel across the top. Replace the lid and let stand for 5 minutes. Fluff with a fork before serving.
