Seared and Steamed Green Beans and Tomatoes with Feta

In this simple side, sweet cherry (or grape) tomatoes and green beans go into the skillet, where both blister and char. We like the fruity, cuminy notes of Aleppo pepper in this dish, but the earthiness of smoked paprika is great, too. Feta cheese sprinkled on at the end adds salty, briny flavor.

Ingredients

    tablespoons neutral oil

  • 1

    pound green beans, trimmed and halved

  • 1

    pint cherry tomatoes OR grape tomatoes, halved

  • Kosher salt and ground black pepper

  • 2

    teaspoons Aleppo pepper OR smoked paprika

  • 1

    jalapeño chili, stemmed, seeded and chopped

  • 2

    ounces feta cheese, crumbled (½ cup)

In a large skillet, heat the oil until barely smoking.

Add the beans, tomatoes and a pinch each of salt and black pepper. Cook, stirring only a few times, until charred.

Stir in the Aleppo pepper and jalapeño.

Add 3 tablespoons water, then immediately cover. Reduce to low and cook, stirring just once or twice, until the beans are tender-crisp and the tomatoes have broken down.

Off heat, season with salt and black pepper.

Transfer to a serving dish and sprinkle with the feta.
