Sweet cherry (or grape) tomatoes go into the skillet with green beans where both blister and char. We like the fruity, cuminy notes of Aleppo pepper in this dish but the earthiness of smoked paprika is great, too. Feta cheese sprinkled on at the end adds salty, briny flavor.

Ingredients
  • 2

    tablespoons neutral oil

  • 1

pound green beans, trimmed and halved

  • 1

pint cherry tomatoes OR grape tomatoes, halved

  • Kosher salt and ground black pepper

  • 2

teaspoons Aleppo pepper OR smoked paprika

  • 1

jalapeño chili, stemmed, seeded and chopped

  • 2

ounces feta cheese, crumbled (½ cup)

In a large skillet, heat the oil until barely smoking. Add the beans, tomatoes and a pinch each of salt and pepper. Cook, stirring only a few times, until charred. Stir in the Aleppo pepper and jalapeño. Add 3 tablespoons water, then immediately cover. Reduce to low and cook, stirring just once or twice, until the beans are crisp-tender and the tomatoes have broken down. Off heat, season with salt and pepper. Transfer to a serving dish and sprinkle with the feta.
