Mexican Red Chili Pulled Pork (Chilorio)

Chilorio is a form of shredded pork from the Mexican state of Sinaloa. It’s defined by a deep red hue from dried chilies and tangy notes from vinegar, orange juice or, in this case, both. Originally, the acidic ingredient, along with spices, was a way to preserve the meat. For our Instant Pot version, we use two types of chilies for complexity. Guajillos bring bright fruitiness and a vivid red color, while anchos are dark and smoky with notes of raisins and chocolate. If you’re up for dry-toasting the chilies before soaking them, doing so will coax out their aroma and deepen their flavor. Serve chilorio with rice and beans, or tuck it into tortillas to make tacos. However you dish it, chopped onion and cilantro are ideal garnishes, along with diced avocado, Mexican crema (or sour cream) and lime wedges.

Tip

Don’t forget to skim the fat off the braising liquid before the final simmering. After the pork begins to break into shreds, the fat will incorporate into the meat and liquid, making it much more difficult to remove.
