  • cup sesame seeds

    teaspoons mirin

  • 4

    teaspoons soy sauce

  • 4

    teaspoons sake

  • 1

    tablespoon white sugar

  • ⅛ - ¼

    teaspoon cayenne pepper (optional)

Step 1

In a small skillet over medium, toast the sesame seeds until fragrant and golden brown, about 4 minutes. Transfer to a plate and cool to room temperature.

Step 2

In a spice grinder, pulse the seeds until coarsely ground, about 3 pulses. Transfer to a small bowl and stir in the mirin, soy sauce, sake, sugar and cayenne (if using).
