The nutty, salty-sweet flavor of the Japanese sesame mixture known as gomae pairs perfectly with the roasted notes of charred broccoli. To maximize flavorful browning, distribute the broccoli evenly in the skillet and pat down the pieces so they make contact with the pan's hot surface. You will need a 12-inch cast-iron skillet for this recipe.
Don’t cut the broccoli larger than specified or the pieces may not cook through in the time indicated in the recipe.
Step 1
In a large bowl, toss the broccoli with the oil and ½ teaspoon salt. Heat a cast-iron 12-inch skillet over high for 3 minutes, or until a drop of water evaporates in 1 to 2 seconds. Add the broccoli and use a wooden spoon to pat it in a snug, even layer; reserve the bowl.
Step 2
Cook without stirring until deeply browned in spots, about 4 minutes. Stir, turn the broccoli, and continue to cook until charred and crisp-tender, another 4 to 5 minutes.
Return the broccoli to the bowl and spoon the sesame sauce on top. Stir until evenly coated. Taste and season with salt.
