Cucumber, Celery and Apple Salad with Yogurt and Walnuts

This crisp-creamy salad is reminiscent of a classic Waldorf salad, but tangy yogurt replaces the mayonnaise, for a lighter, fresher flavor.

This crisp-creamy salad is reminiscent of a classic Waldorf salad, but tangy yogurt replaces the mayonnaise, for a lighter, fresher flavor. Thin half-rounds of cool cucumber and chopped dill fit seamlessly into the mix of apples and celery. For a light main dish or an elegant first course, lay slices of smoked salmon on each serving before sprinkling with the dill and walnuts.

Tip

Don’t make this salad too far ahead of serving it. It’s best as soon as the ingredients are mixed.

Ingredients
  • ¾

    cup plain whole-milk yogurt

  • 2

    tablespoons extra-virgin olive oil

  • 1

    tablespoon dijon mustard

  • 1

    tablespoon lemon juice, plus more as needed

  • 3

    tablespoons finely chopped fresh dill, divided

  • Kosher salt and ground black pepper

  • ½

    English cucumber, halved lengthwise and very thinly sliced crosswise

  • 1

    Honeycrisp OR Gala apple, quartered, cored and very thinly sliced crosswise

  • 1

    cup red OR green seedless grapes, halved

  • 2

    medium celery stalks, thinly sliced on the diagonal

  • ¾

    cup walnuts, toasted and roughly chopped, divided

Step 1

In a large bowl, stir together the yogurt, oil, mustard, lemon juice, 2 tablespoons of dill and ½ teaspoon each salt and pepper.

Add the cucumber, apple, grapes, celery and ½ cup walnuts, then fold to combine.

Taste and season with salt, pepper and additional lemon juice.

Step 2

Transfer to a serving bowl and sprinkle with the remaining 1 tablespoon dill and the remaining walnuts.
