Coconut Rice

This coconut rice is rich with tropical notes that work especially well with jasmine rice. Coconut milk adds richness; to keep the rice light and fluffy, we also use unsweetened coconut water. The bottom of the rice may caramelize during cooking; this is normal.

Tip

Don’t forget to stir the rice mixture as it comes to a boil to prevent sticking. However, once the lid goes on, let the rice cook undisturbed.

Ingredients
  • 2

    cups jasmine rice, rinsed and drained

  • 1 ⅔

    cups unsweetened coconut water

  • ¾

    cup coconut milk

  • ½

    teaspoon white sugar

  • ½

    teaspoon kosher salt

In a medium saucepan, stir together all the ingredients. Bring to a simmer over medium-high, stirring occasionally, then cover, reduce to low and cook without stirring until the rice has absorbed the liquid, 10 to 12 minutes. Remove from the heat and let stand, covered, for 10 minutes. Fluff with a fork.
