This colorful combination of ingredients can be tucked into tacos, stuffed into quesadillas or used as a topping, along with ripe avocado, on a leafy green salad. It’s great warm or at room temperature.
In a medium bowl, stir together the beans, peppers and corn. Taste and season with salt and pepper.
