
Black Bean Soup

Here, basic black beans are made into a lightly spicy, subtly smoky vegetarian soup. Cornbread or warmed tortillas are excellent accompaniments.
In a large saucepan over medium, combine the beans, their cooking liquid and the chipotle chili. Cook, stirring often, until heated through, 5 to 8 minutes. Off heat, stir in the cilantro and lime juice. Taste and season with salt and pepper.
