
Annatto Oil

Annatto is the seed from the achiote tree. Mild flavor and vivid red color.
In a small saucepan, combine the annatto seeds and oil. Heat over low, occasionally swirling the pan, until the oil is deep red, about 10 minutes. Cool completely, then pour through a fine-mesh strainer set over a jar. Cover and store at room temperature for several months.
