In Tuscany, Antonio Mattei Premiata Fabrica di Biscotti is a bakery that has been churning out the twice-baked cookies for more than a century. Their biscotti are classic and simple, just flour, sugar, eggs, almonds and pine nuts. On the other hand, cookbook author Giulia Scarpaleggia includes citrus zest and honey for richer flavor and chewier texture in her homemade version. This recipe bridges the two—our cookies have satisfying snap, with floral and citrus notes from a little honey plus lemon and orange zest. While the biscotti are great the day of baking, their flavor and texture are best the following morning—perfect for dunking in coffee or tea.
Don’t skip the step of rubbing the orange and lemon zests into the sugar. This draws out the zests’ essential oils and evenly distributes them for bright citrus flavor throughout the biscotti.
