Induction vs Gas Ranges for a New Home Kitchen

Hi! We're getting ready to build a new semi-custom home. The standard range is a very nice 36" gas range - very similar to what we've had for many years and have liked. But I'm really tempted to make the leap to an induction range. We recently tried one out at a cooking class and it was very cool, especially the control and easy cleanup. The safety argument is also compelling - no chance of a gas leak, unlit burner, or theoretically harmful fumes. It's also a substantial investment/commitment. We'll be cooking on it every day.

Before we make the leap, I wanted to seek the wisdom of the experts here. Any informed opinions?

    This is not actually a cooking point but you need to know that people who have an implanted heart monitor or a pacemaker can not get within two feet of these cook tops. The reason is that the magnetic charge given off by the device interferes with the heart device’s function. So keep that in mind if you have a family member or friend who has an implant.

      Thank you for bringing up this important safety concern. It sounds like it would be a good idea for anyone who has an implanted heart monitor or a pacemaker to consult with their physician if they are considering the purchase of an induction stovetop.

    Thanks, Judith. That's a good point. No one in my family is in that category, but I'd hate to accidentally cause harm to a visitor.

    I did find this article from the National Institutes of Health which seems reassuring.

    our new (3 years ago) home came with an induction range. i was sceptical and it meant i lost use of a lot of my Alclad cookware and eventually replaced it with compatible pieces from their factory 2nd's sales over the course of the 1st year.

    despite having to spend the extra money, and, after using gas for over 40 years, i would never go back. i do miss being able to blacken peppers and heat tortilla shells, etc., but a portable butane burner works well for such tasks provided common sense caution is observed.

    Gas ranges release SO MUCH more heat than induction. We have had an induction for 5 years and have been very happy with it. The main difficulty is finding decent non-stick skillets that are induction friendly. Hexclad is the best of the options.
