Measuring Up Uncommon Weights and Volumes

We gathered our scales and measuring cups to sort out the weight and volume equivalencies of some the most common ingredients.

Kitchen conversions between weight and volume sometimes are obvious and easy. A cup of water is 8 ounces whether tallied by a scale or by volume. And most sticks of butter are conveniently marked to make switching between ounces, tablespoons and cups effortless.

But plenty of commonly used ingredients aren't nearly so intuitive. How many cups are in 28-ounce can of tomatoes? What does 1 ounce of chopped parsley mean in volume? Do dairy products weigh out the same as water?

To suss it out, we gathered our scales and measuring cups to sort out the weight and volume equivalencies of some the most common ingredients that didn't have obvious conversions.
