Best Recipe You've Never Heard of: Garlic and Bread Soup

The best recipe you’ve never heard of is...Spanish Garlic and Bread Soup! This comes from the great José Andrés, whose family called it an “end-of-the-month” recipe—the type of meal you can throw together from odds and ends. It is basically a stone soup. Garlic cooked in copious amounts of olive oil, with thinly sliced stale bread and several tablespoons of smoked paprika. Add some water and simmer, then off heat whisk in four or five eggs.
We use chicken broth and turn the bread into croutons, for ladling the soup on top at the end. It’s Chris Kimball’s favorite type of recipe—a couple ingredients, used to their maximum potential.
