Tired of aggressive garlic? Try poaching whole heads for mellow, sweet flavor. When making stews and soups, add a a whole head—with just the top third sliced off—to cook along with the meat. By the time the stew is done, the now-tender cloves slip out of their skins and add a whole new layer of mild but savory flavor.
