
White Bean Dip with Roasted Red Peppers

In a small bowl, toss together the mint, parsley and lemon zest. In a food processor, combine the beans, lemon juice, roasted peppers, oil, garlic, paprika, 2 teaspoons salt and ¼ teaspoon pepper, then puree until smooth, about 30 seconds, scraping the bowl as needed.
Transfer to a serving bowl. Sprinkle with additional paprika and drizzle with oil.
