This sweet-sour, spicy and slightly syrupy sauce is called nam jim gai. It’s the customary condiment for Thai grilled chicken but also is terrific with grilled or roasted pork and is an excellent dipping sauce for just about any type of fried foods, from corn fritters to egg rolls. Fresh red Thai chilies are preferable, as they bring a subtle fruitiness to the sauce, but dried red pepper flakes work, too.
