These crisp, golden fried Thai dumplings can be served at any time of year but they’re especially festive during Songkran, or Thai New Year, which takes place annually on April 13. Tung tong, which means “bag of gold,” symbolize prosperity and wealth. The filling can be made with either ground pork or chicken, and it’s spiked with bright ginger and savory garlic. There’s no need to complicate the dumplings’ folding method—gather the edges together and gently press to achieve the purse-like shape.

Tip

Don’t skip the step of blanching the chives. This makes them pliable so they can be tied into knots and around the neck of the dumplings.
