
Tahini-Yogurt Sauce

This simple tahini sauce is a creamy, cooling counterpoint to crisp, freshly fried falafel. It can be made a day or two in advance and stored in an airtight container in the refrigerator, but bring to room temperature before serving.
Put the tahini in a medium bowl. Gradually whisk in the water, followed by the yogurt, lemon juice and ½ teaspoon salt. Whisk in the sesame seeds.
