
Sweet Chili Dipping Sauce

This simple garlicky, tangy, spicy-sweet dipping sauce is known as nam jim kai. It’s the condiment of choice for fried foods, as well as for grilled chicken. You can purchase the sauce in bottles at the grocery store, but homemade tastes much fresher and more balanced. It will keep in an airtight container in the refrigerator for a week; bring it to room temperature before serving.
In a small saucepan, combine the garlic, chilies, sugar, vinegar, ½ cup water and ½ teaspoon salt. Bring to a boil over medium-high, stirring to dissolve the sugar, then reduce to medium and simmer, stirring occasionally, until lightly syrupy and reduced to about ¾ cup, about 15 minutes. Transfer to a jar or small bowl and cool completely.
