Spinach, Grape and Feta Salad

Ingredients

    tablespoon shallot, minced

  • 2

    teaspoons sherry vinegar

  • ½

    teaspoon dijon mustard

  • ¼

    teaspoon kosher salt

  • teaspoon ground black pepper

  • 2

    tablespoons extra-virgin olive oil

  • 8

    cups baby spinach, loosely packed

  • 1

    cup seedless red grapes, halved

  • cup crumbled feta cheese

In a large bowl, combine the shallot and sherry vinegar; let stand for 10 minutes.

Whisk in the Dijon mustard, salt and pepper, then whisk in the extra-virgin olive oil.

Add the baby spinach, grapes and crumbled feta cheese. Gently toss to combine.
