
Spicy Garlic-Sesame Tarka

If you don't have Aleppo pepper, use 1 teaspoon paprika and ½ teaspoon red pepper flakes. Try this tarka on blanched or steamed vegetables, roasted meats or grilled seafood. It's also a wonderful condiment for sliced avocado.
In a small saucepan over medium-high, combine the oil and sesame seeds. Swirling the pan frequently, heat until the seeds begin to sizzle and turn golden at the edges, 45 to 90 seconds.
Add the Aleppo pepper and swirl until the flakes just begin to darken, then swirl in the garlic and chili.
Use immediately or pour into a heatproof jar if making ahead.
