Sesame-Lime Vinaigrette

To make this bright, citrusy vinaigrette, we first steep a minced shallot in lime juice to tame its allium bite. Sesame flavor is layered in, with oil providing deep, rich notes and toasted ground seeds bringing subtle bitterness and earthy notes. The seeds also give the dressing body. To coarsely grind the seeds, pulse them a few times in a spice grinder. Drizzle onto steamed baby bok choy, asparagus or snow peas. It’s also good with roasted carrots or cauliflower.

    teaspoons grated lime zest, plus ¼ cup lime juice

    large shallot, minced

  • ¼

    cup neutral oil

  • 2

    teaspoons toasted sesame oil

  • 2

    tablespoons sesame seeds, toasted and coarsely ground

  • 1

    tablespoon honey

  • ½

    teaspoon red pepper flakes

  • Kosher salt

In a small bowl, stir together the lime juice and shallot; let stand for 15 minutes. Whisk in the lime zest, both oils, sesame seeds, honey, pepper flakes and ¼ teaspoon salt.
