Scallion Noodles

These noodles come together in minutes using a combination of high-flavor pantry items. After draining the noodles, make sure to rinse them to remove excess starch and to cool them to room temperature. Allowing the noodles to stand for 10 minutes after tossing with the sauce gives them the chance to absorb flavor.

Ingredients

    bunch scallions, chopped, whites and greens separated

    cup low-sodium soy sauce

  • 2

    tablespoons rice vinegar

    tablespoon light brown sugar

  • 1

    tablespoon toasted sesame oil

    ounce package Asian noodles, such as udon or soba

In a large bowl, mix the scallion whites, soy sauce, vinegar, sugar, sesame oil and a pinch of salt. Cook the noodles, drain and rinse with cold water. Toss with the scallion sauce. Let stand 10 minutes, then add the scallion greens and season with salt and pepper.

Optional garnish: A fried egg OR a splash of chili oil ORhot sauce
