    medium plum tomatoes, cored, seeded and finely chopped

  • 1

    jalapeño chili, stemmed, seeded and sliced into thin half rings

  • ¾

    teaspoon kosher salt

  • 3

    tablespoons red wine vinegar

  • 2

    tablespoons finely chopped fresh cilantro

In a small bowl, stir together all ingredients. Cover and let stand, stirring a few times, for at least 30 minutes or up to 2 hours.
