At Smoke & Mirrors bar in Singapore, this lightly fruity update to the original Singapore sling is topped with bubbles made from emulsified pineapple juice. We found a strip of orange zest gave our version similar tropical aromas and was more practical for home mixology. It's worth squeezing fresh orange juice for this cocktail; you'll need about ¼ of a large orange per drink.
In a cocktail shaker, combine the rye, orange juice, cassis, simple syrup and bitters. Add 1 cup of ice, then shake for 15 to 20 seconds, or until the sides of the shaker are quite cold. Strain into a chilled coupe glass. Top with a splash of prosecco and orange zest.
