Mustard-Roasted Cauliflower with Dill

We use a preheated baking sheet to quickly maximize the caramelization of roasted cauliflower and bring out sweet, nutty flavors. Before they go on to the searing-hot sheet, the florets are tossed in a mix of whole-grain and Dijon mustards spiked with honey and lemon for spicy, tangy contrast.

Ingredients
  • cup whole-grain mustard

  • 2

    tablespoons Dijon mustard

  • 2

    tablespoons extra-virgin olive oil

  • 2

    teaspoons grated lemon zest, plus 1 tablespoon lemon juice

  • 1

    teaspoon honey

  • Kosher salt

  • 2

    pound head cauliflower, trimmed, cored and cut into 1½-inch florets

  • Chopped fresh dill, to serve

Step 1

Heat the oven to 500°F with a rimmed baking sheet on the middle rack.

Step 2

In a large bowl, whisk together the mustards, oil, lemon zest and juice, honey and ¼ teaspoon salt. Add the cauliflower and toss to coat.

Step 3

Quickly remove the hot baking sheet from the oven and empty the cauliflower onto it, scraping the bowl; distribute the florets in an even layer. Roast until well browned and tender, 15 to 20 minutes, stirring halfway through. Taste and season with salt. Serve sprinkled with dill.
