This recipe balances the sweet, nutty flavor of cauliflower roasted on a searing-hot baking sheet with the tanginess of whole-grain and Dijon mustards spiked with honey and lemon.

    tablespoons dijon mustard

  • 3

    tablespoons extra-virgin olive oil

  • Grated zest and juice of 1 lemon

  • Honey OR brown sugar

  • Kosher salt

  • 2

    pound head cauliflower, trimmed and cut into 1½-inch florets

  • Chopped fresh dill OR flat-leaf parsley

Heat the oven to 500°F with a rimmed baking sheet inside. In a large bowl, whisk both mustards, the oil and lemon zest and juice, then season with honey and salt. Add the cauliflower and toss. Quickly remove the hot baking sheet from the oven and distribute the cauliflower in an even layer on it, scraping the bowl. Roast until well browned and tender, about 20 minutes, stirring once halfway through. Serve sprinkled with dill.
