Korean ssamjang, a salty, spicy condiment used with foods that often are wrapped in lettuce for eating, inspired this umami-packed no-cook sauce. It gets its rich, spicy-sweet flavor from a combination of white miso and gochujang—two high-impact ingredients we always keep on hand—plus toasted sesame oil. Scallions and garlic add allium pungency. Serve with grilled or roasted meat, poultry or seafood, or even on runny-yolked fried eggs on top of a bowl of rice.

Ingredients

    cup white miso

  • 2

    tablespoons gochujang

  • 1 ½

    tablespoons toasted sesame oil

  • 4

    scallions, thinly sliced

  • 1

    medium garlic clove, finely grated

  • 2

    teaspoons white sugar

  • Optional add-ins:
  • Chopped toasted walnuts OR toasted sesame seeds OR both

In a small bowl, whisk together all ingredients and ¼ cup water. Use immediately or refrigerate in an airtight container for up to 2 weeks.
