Île flottante, or “floating island,” is a classic French dessert of meringue poached gently in warm milk. Here, it gets a modern twist thanks to the Instant Pot. High-temperature pressure cooking may seem counterintuitive for such a delicate dish, but the fluffy, melt-in-your-mouth texture says otherwise. When cooled, the meringue is firm enough to slice like a cake.
