
Green Beans with Chipotle Chili and Peanuts

Inspired by the smoky, nutty notes of Mexican salsa macha, this green bean dish employs our sear-and-steam technique. We sear the beans in a hot skillet until charred, then add water and a tight-fitting lid, allowing them to steam through. The result is deep flavor from browning and a pleasing tender-crisp texture. Sesame seeds and peanuts add plenty of crunch, while chipotle chili in adobo and fresh lime juice contribute smokiness and bright, citrusy flavor.
Step 1
In a 12-inch skillet over medium, combine 2 tablespoons oil and the garlic. Cook, stirring, until the garlic begins to brown, about 1 minute. Add the peanuts and sesame seeds; cook, stirring, until the mixture is golden brown, about 1 minute. Transfer to a small bowl and set aside; wipe out the skillet.
Step 2
In the same skillet over medium-high, heat the remaining 2 tablespoons oil until barely smoking. Add the green beans and stir to coat, then sprinkle with ¼ teaspoon salt and ½ teaspoon pepper and distribute in an even layer. Cook, stirring only a few times, until the beans are lightly charred, about 4 minutes. Add ¼ cup water, then immediately cover. Reduce to medium and cook, occasionally shaking the pan, until the water has cooked off and the beans are tender-crisp, about 3 minutes.
Step 3
Off heat, stir in the chipotle chili and lime juice. Taste and season with salt and pepper. Transfer to a serving dish and sprinkle with the peanut-sesame mixture.
