This light, flavor-packed dish is wondrously simple to prepare. In less than 15 minutes, large briny-sweet shrimp—coated in bold seasonings including ginger, soy, mirin, sesame oil and lime—are steamed to perfection. Fragrant scallion greens and tender napa cabbage leaves layered over the shrimp add vibrant pops of color as well as supple crunch. During cooking, the combined moisture of the shrimp, marinade and vegetables creates a zingy, savory-sweet sauce that’s especially delicious spooned over rice.
Don’t start the shrimp in a hot pan; beginning with a cold pan ensures they cook evenly and gently so their finished texture is tender and plump.
Step 1
In a 12-inch skillet off heat, stir together the scallion whites, cilantro stems, mirin, soy sauce, ginger, sesame oil, lime zest and ¼ teaspoon salt. Add the shrimp and toss to coat, then distribute in an even layer. Scatter the scallion greens and cabbage over the top.
Step 2
Set the pan over medium, cover and cook undisturbed until the shrimp are pink at the edges and beginning to curl, 6 to 9 minutes, stirring once about halfway through. Remove from the heat and let stand, covered, until the shrimp are opaque throughout, 2 to 3 minutes.
Step 3
Stir in the lime juice and half the cilantro leaves, then taste and season with salt and pepper. Serve sprinkled with the remaining cilantro leaves.
