Pork Skewers with Garlic, Orange and Yogurt

Greek yogurt seasoned with coriander, garlic and orange zest does double duty in this recipe. It’s used a sauce for serving and also creates a flavorful coating for chunks of pork loin. The yogurt-tossed pork is speared onto skewers and cooked quickly under the broiler; the char they develop adds flavor to the lean, mild-tasting meat. Serve with a rice or orzo pilaf and a simple leafy salad.

Ingredients

    cup plain whole-milk Greek yogurt

  • 1

    tablespoon ground coriander

  • 2

    medium garlic cloves, finely grated

  • Grated zest and juice from 1 orange

  • 1

    tablespoon extra-virgin olive oil

  • 1

    tablespoon honey

  • Kosher salt and ground black pepper

  • pounds 1-inch-thick boneless pork loin chops, cut into 1-inch chunks

  • Optional garnish: Chopped fresh flat-leaf parsley OR cilantro

Mix the yogurt, coriander, garlic, orange zest, oil, honey, 1½ teaspoons salt and 1 teaspoon pepper. In a small bowl, combine half the yogurt mixture and 1 tablespoon of orange juice; set aside. Toss the pork with the remaining yogurt mixture. Heat the broiler with a rack 6 inches from the element. Thread the pork onto metal skewers and place on a wire rack set in a rimmed baking sheet. Broil until lightly charred, about 7 minutes, turning once halfway through. Drizzle with the remaining orange juice and serve with the yogurt sauce.
