For the best fried eggs, we cook them covered so the surface of the whites sets quickly and without risk of overcooking the yolks. Runny-yolked fried eggs can make a complete meal out of a simple salad. They also are excellent over fried rice, soft polenta, root vegetable hash, stir-fried vegetables, avocado toast, a grain bowl or even a burger or pizza. To make just two eggs, use an 8-inch nonstick skillet and 2 teaspoons of butter.

    large eggs in their shells

  • Kosher salt and ground black pepper

In a 12-inch nonstick skillet over medium, melt the butter, swirling to coat the pan. When the butter stops foaming, crack an egg into each quadrant of the pan. Use a silicone spatula to gently push the edges of the egg whites toward the yolks to keep the eggs separate. Cover and cook until the whites are set but the yolks are still runny, about 1½ minutes. Season with salt and pepper, then slide the eggs onto individual plates.
