Egyptian Nut-and-Seed Seasoning (Dukkah)

Use dukkah to add crunch to salads, to season olive oil for dipping bread, or to create a crust on roasted or grilled meat, chicken or fish. Store in an airtight container at room temperature for up to a week. Freeze for longer use.

    cup raw cashews

  • 2

    tablespoons sesame seeds

  • 2

    tablespoons coriander seeds

  • 2

    tablespoons cumin seeds

  • 1

    tablespoon caraway seeds

  • 1

    teaspoon dried oregano

  • ½

    teaspoon kosher salt

  • ½

    teaspoon ground black pepper

In a large skillet over medium, toast the cashews, stirring, until beginning to brown, 3 to 4 minutes. Add the sesame seeds and toast, stirring, until golden, 1 to 2 minutes. Add the coriander, cumin and caraway seeds and toast, stirring, until fragrant, about 1 minute. Transfer to the food processor and let cool for 5 minutes. Add the oregano, 1/4 teaspoon salt and pepper. Pulse until coarsely ground, 12 to 15 pulses.
