
Citrus Vinaigrette with Green Olives and Garlic

Briny olives, savory garlic and sunny-sweet orange zest and juice give this vinaigrette Mediterranean spirit. The garlic gets a brief soak in lemon juice for more mellow flavor. It is best with sturdy bitter greens, such as frisée, radicchio and escarole, that hold their own against the big, bold flavor of the dressing and also catch the fine bits of olives. We also love to drizzle this over cannellini beans or a salad of oranges and fennel.
In a small bowl, stir together the garlic and lemon juice; let stand 10 minutes. Add the oil, orange zest and juice, and ¼ teaspoon each salt and pepper; whisk to combine. Stir in the olives.
