
Citrus-Macerated Strawberries

In a large bowl, toss together 2 pounds strawberries (hulled and quartered), 54 grams (¼ cup) white sugar, 4 teaspoons grated orange, lemon or lime zest and a pinch of table salt. Let stand at room temperature until the berries have softened slightly and released some juices, at least 15 minutes or up to 1 hour, tossing the mixture a few times.
