Yakisoba, a stir-fry of ramen noodles, vegetables and salty-sweet seasonings, is a Japanese mainstay. It’s such a popular dish that grocery stores sell yakisoba kits that include fresh noodles and seasoning packets, as well as instant versions requiring only boiling water and a couple minutes to prepare. This is an easy homemade version that uses dried non-instant ramen and adds chicken and cabbage to make a complete meal. A trio of pantry staples—soy sauce, ketchup and Worcestershire sauce—provide big, bold flavor that the noodles absorb during stir-frying.

    ounces dried non-instant ramen noodles

    tablespooons Worcestershire sauce

    tablespoons neutral oil, divided

    pound boneless, skinless chicken thighs, cut into ¾-inch chunks

  • Kosher salt and ground black pepper

    ounces green cabbage, cored and thinly sliced (about 3 cups)

Step 1

In a large pot, bring 3 quarts water to a boil. Add the ramen and cook, stirring occasionally, until tender. Drain in a colander and rinse under cold water, tossing, until cool, then drain again. In a medium bowl, whisk together soy sauce, ketchup and Worcestershire sauce; set aside.

Step 2

In a 12-inch nonstick skillet over medium-high, heat 1 tablespoon oil until shimmering. Add the chicken and sprinkle with ½ teaspoon salt. Cook, stirring occasionally, until well browned, about 8 minutes; transfer to a plate.

Step 3

To the now-empty skillet over medium-high, add the remaining 1 tablespoon oil and heat until shimmering. Add the cabbage and ¼ teaspoon each salt and pepper. Cook, stirring occasionally, until lightly browned, about 5 minutes. Add the noodles, soy mixture and chicken with accumulated juices. Cook, tossing, until the noodles absorb the seasonings and the pan is dry, about 2 minutes. Off heat, taste and season with salt and pepper.
