A marinade of thick, creamy greek yogurt seasoned with fresh ginger, paprika, lemon zest and honey forms a coating on shrimp that not only gets the flavorings to adhere but also helps tenderize them and aids in caramelization. The prep for this dish is minimal, and cooking happens in a matter of minutes, so the shrimp can be on the table fast. Mango chutney or green (also called cilantro) chutney are excellent condiments to offer on the side. Serve with basmati rice or warm naan, or add the shrimp to a grain-based or leafy salad.
In a medium bowl, whisk together the yogurt, oil, ginger, paprika, lemon zest, honey and ½ teaspoon each salt and pepper. Add the shrimp and toss to coat; let stand at room temperature for about 30 minutes. Heat the oven to broil with a rack about 4 inches from the element. Set a wire rack in a broiler-safe rimmed baking sheet, then distribute the shrimp in an even layer on the rack. Broil until the shrimp are just opaque and lightly charred, 4 to 5 minutes.
