Broccolini with Miso Caesar Dressing

This spin on Caesar dressing uses mayonnaise as a base. It’s rich in umami because of the Parmesan (or anchovies), and a couple tablespoons of white miso adds incredible depth of flavor, loads of complexity and a subtle sweetness. A splash of olive oil and garlic, its bite tempered by a quick steep in tangy lemon juice, complete the dressing. We use this on blanched Broccolini, but you could substitute 1 large head romaine lettuce, torn into bite-size pieces, then finish the salad with crunchy croutons.

Ingredients

    tablespoons lemon juice

  • 1

    medium garlic clove, finely grated

  • ½

    cup mayonnaise

  • ½

    ounce Parmesan cheese, finely grated (¼ cup) OR 2 oil-packed anchovy fillets, patted dry and mashed to a paste

    tablespoons white miso

  • 2

    tablespoons extra-virgin olive oil

  • Kosher salt and ground black pepper

  • 2

    pounds Broccolini, trimmed

Step 1

In a small bowl, stir together the lemon juice and garlic. Let stand for 10 minutes. Add the mayonnaise, Parmesan, miso and oil; whisk until well combined. Taste and season with salt and pepper.

Step 2

In a large pot, bring 2 quarts water to a boil. Add 1 tablespoon salt and the Broccolini; cook, stirring occasionally, until bright green and tender-crisp, 6 to 8 minutes. Drain in a colander, shaking to remove excess water, then transfer to a platter. Drizzle with three-fourths of the dressing. Sprinkle with additional pepper and serve with the remaining dressing on the side.
