
Asparagus in Black Bean-Garlic Sauce

Spicy-sweet and rich with umami, this easy asparagus dish uses prepared black bean-garlic sauce. The widely available seasoning base can be found in the international aisle of most supermarkets. Paired with red pepper flakes, honey and Shaoxing wine (or dry sherry), it makes a flavor-packed glaze for earthy asparagus. We char then steam the asparagus for the perfect tender-crisp bite. A final flourish of thinly sliced scallions contributes zingy crunch and brightness.
Step 1
In a small bowl, whisk together the black bean sauce, pepper flakes, honey and Shaoxing wine; set aside. In a 12-inch skillet over medium-high, heat the oil until barely smoking. Add the asparagus and stir to coat, then sprinkle with ½ teaspoon pepper and distribute in an even layer. Cook, stirring only a few times, until the asparagus is lightly charred, about 4 minutes.
Step 2
Stir in the black bean mixture and ¼ cup water, then immediately cover. Reduce to medium and cook, occasionally shaking the pan, until the asparagus is tender-crisp, about 2 minutes. Uncover, increase to medium-high and cook, stirring, until the sauce thickens and clings to the asparagus, 1 to 2 minutes. Taste and season with salt and black pepper, then transfer to a serving dish and sprinkle with the scallions.
