    medium garlic cloves

    tablespoons lemon juice or sherry vinegar

    cup mayonnaise

  • 2

    tablespoons extra-virgin olive oil

  • ¼

    teaspoon kosher salt

In a small bowl, stir together 2 medium garlic cloves (finely grated) and 2 tablespoons lemon juice or sherry vinegar; let stand for 5 minutes. Whisk in ½ cup mayonnaise, 2 tablespoons extra-virgin olive oil and ¼ teaspoon kosher salt. Just before serving, taste and season with kosher salt and ground black pepper.
